Cajun Crusted Chicken Recipe
Serves: 4
  • 1 cup Cajun Spice Mix
  • 1 tablespoon olive oil
  • Plus 2 tablespoons olive oil for cooking
  • 4 boneless skinless chicken breast halves
  1. Spread the spice mix in a shallow baking dish. Lightly brush oil over all sides of chicken, then press the chicken into the spice mix. Repeat with the remaining chicken breasts and discard any leftover spice mix.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts to the pan. Reduce the heat to medium and cook for approximately 4-6 minutes on each side, until the meat is no longer pink and juices run clear.
