Banana Chocolate Cupcakes with Peanut Butter Frosting

  • ¼ cup of creamy peanut butter
  • 2 cups of mashed ripe bananas
  • 1 tablespoon canola oil
  • 3 tablespoons water
  • 2 large eggs
  • 1 package of Devil’s Food Cake or Chocolate Cake Mix without pudding
  • 1 Chocolate Bar (optional, for garnish)
  • Peanut Butter Frosting (recipe follows this one)
  1. Preheat oven to 350 degrees.
  2. Line cupcake pan with cupcake liners.
  3. In a large bowl, mix together peanut butter, mashed bananas, oil and water with an electric mixer on medium smooth until smooth. It’s okay if there are still a few small chunks of banana.
  4. While on low speed, add in the eggs and cake mix. Mix on medium-high until batter is completely smooth.
  5. Spoon batter into the cupcake liners, filling about ⅔ full. Bake for 15-20 minutes, cool.

  7. Frost cupcakes – I used a Wilton 1M Swirl to frost the cupcakes. Garnish with chocolate shavings – I used a knife to shave off part of a chocolate bar!
