Hearty Meat Chili in Bread Bowls Recipe

  • 1 lb lean ground beef
  • 1 small onion, chopped (about 1 cup)
  • 2 (14.5 oz) cans chili style diced tomatoes (I like Rotel, I mix one mild and one original)
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 2 (15 oz) cans tomato sauce
  • 1 (15 oz) can red kidney beans, drained and rinsed
  • 3 TBSP chili powder
  • 1 tsp black pepper
  • For Serving:
  • Two small round loaves of bread
  • Shredded cheese
  1. In a large stockpot, brown the ground beef and the onion. Drain the excess fat. Add the diced tomatoes, tomato sauce, beans and seasoning and stir. Simmer the chili for 1 hour.
  2. To serve, cut a circle in the top of the bread and scoop out some of the middle. Fill the hole with chili and top with cheese.
  3. Note: you can also place the mixture into a slow cooker to simmer until you are ready to eat! 4-6 hrs on high, or 8-10 hours on low.
