In a small saucepan over medium-high heat, combine; water, sugar, molasses or honey and bring to a boil. Add ginger, cinnamon, cinnamon stick and allspice. Reduce heat and cover, simmer for 20 minutes. Remove from heat, allow to cool and pour through a mesh strainer,cheesecloth, or coffee filter to strain undissolved spices. Pour into bottle of your choice and store in refrigerator.
