Menu Plan Monday | Week of 4/8/13

I am slowly getting back into the routine of cooking at home most nights of the week. Last week we even stuck to my menu plan with the exception of one night – we ate out twice vs once. And by “eat out” I mean take out – we don’t actually go and sit down at a restaurant with our kiddos all that often. It’s still kind of stressful. ;-) After talking to a friend of mine this weekend I’m going to try to start doing more prep on Sundays after I have written out our menu plan (veggie and fruit washing, chopping and bagging, hard boiling eggs etc..). She has been doing this and it sounds like it’s been pretty successful, so I thought I would give it a shot too. I think the prep will help out the most with lunches for my husband and I…yet another area where we need improvement!

Here is what I’m planning for this week:

  • MondayBalsamic Slow Cooker Chicken over Angel Hair Pasta, Green Beans
  • Tuesday – Taco Salad
  • WednesdayTurkey Meatloaf, Baked Potatoes, Peas (I halve this recipe and will still freeze half of the loaf for a future meal)
  • Thursday – Crockpot Veggie Soup, Sourdough Bread (I’ll freeze half of the soup for a future meal)
  • Friday – Eat Out/Take Out  – probably pizza
  • Saturday – Grilled Chicken Breasts, Red Potato and Bell Pepper Packets (also thrown on the grill)
  • Sunday – Burgers and Frozen Fries, Mixed Vegetables

Stopping by from Org Junkie… your menu looks so yummy! Seriously, the balsamic slow cooker chicken sounds FAB!
