Menu Plan Monday | Week of 4/29/13

WOOHOO! We had a great week last week! I made everything on our menu plan (I did switch a few of the nights around). I’m feeling motivated to keep the trend going. If you haven’t already, be sure to check out my tips for saving money on healthy, budget friendly snacks. I have been spending about 30 minutes each Sunday dividing snacks into baggies to grab all week and it is saving me a ton of time! I would love to hear any money and time saving tips that you have when it comes to preparing your snacks or meals in advance.

I have been spending entirely too much money at the grocery store lately and I’m feeling pretty stocked up, so this week I am going to try my best to do minimal shopping and use up what I have in the freezer, pantry and fridge. Yes, we are going to have some sort of “burger salad” twice this week and some sort of Mexican dish twice as well. The flavors should be different enough that it won’t matter to us. :-)

Here is what I’m planning for our dinners this week:

  • MondaySlow Cooker Chicken Tortilla Soup
  • Tuesday – Turkey Burger Salad (recipe + pictures to come!)
  • WednesdayBeef Fajitas + Rice (I’m going to use a beef roast from the freezer instead of flank steak, cooking it in the crockpot)
  • Thursday – Baked Penne with Homemade Meat Sauce, Garlic Bread, Salad
  • Friday – Pizza (take out)
  • Saturday – We’ll be eating at a birthday party
  • Sunday – Cheeseburger Salad (I’m going to try to recreate one that I had a restaurant recently – if it’s good I’ll share a recipe and pictures. ;-))
