Menu Plan Monday | Week of 4/1/13

Yes, I fully realize that it is Tuesday…however, I took the time to write out a menu plan this week so I wanted to share. ;-) I am still trying to dig myself out of the mess that comes from being out of town for the weekend, but I’m trying to stay committed to cooking and eating at home.

I mentioned last week that I’m in a cooking rut due to many things – with the main one being I’m reading too much online about eating real, whole foods and I’m basically scared to buy or cook anything for fear that I’m doing something “wrong”. I have decided that I need to get over it and do the best that I can. If that means I use one can of cream of chicken soup per month (or week…or whatever!), so be it. We’ll see how it goes.

Here is what I’m planning for this week. I bought a huge container of mixed spring greens and a 6 pack of red/yellow/orange peppers at Costco today – so we are going to be eating a lot of salad!:

  • Monday – BBQ Chicken (Crockpot – literally frozen chicken breasts, bbq sauce and some water), Rice, Frozen Vegetables
  • TuesdayTaco Pizza Wheel and salad
  • Wednesday – Grilled Chicken Salad (w/red onion, red, orange and green peppers, cucumber, feta, cranberries & homemade dill dressing) – I’ll try to post a picture and recipe of this soon!
  • Thursday – Eat Out (likely pizza & leftover salad)
  • FridayMama Rita’s Meatballs, Spaghetti, Garlic Bread & leftover salad
  • Saturday – Dinner with friends (I’ll probably make dessert)
  • Sunday – Breakfast for Dinner: Ham & Cheese Omelets (leftover Easter ham!), Chocolate Chip Pancakes and fruit
