Menu Plan Monday | Week of 3/18/13

I have a confession to make. I am in a major, mega, HUGE cooking rut right now. 2 things that I think are contributing to this funk are 1) my super picky kids and 2) all of the scary posts that I read on the internet about what is wrong with our food and how it is going to give all of us cancer. The joy that I once found in cooking has been replaced by frustration that I’ll spend time cooking only to have my kids turn their noses up at me, paired with FEAR. Sigh.

Spring and summer will be here soon and we’ll be able to grill and eat veggies that we grew ourselves and I won’t be quite so stressed out about it…right? :)

Here is what I came up with this week, with notes and links to the recipes when available. I’m trying one new recipe this week and resurrecting some oldies but goodies that I love. Hopefully that will give me the kick start that I need to start cooking at home more:

  • Monday – Turkey Burgers on Pita Bread, Tomato Feta Salad, (Frozen Fries for the kids)
  • TuesdayRoasted Chicken, Baked Potatoes, Frozen Veggie (I never did roast a chicken last week, so I’m going to try again)
  • WednesdayBeef Fajitas, Cilantro Lime Rice
  • Thursday – Homemade Chicken Noodle Soup (using leftover chicken from Tuesday), Bread
  • FridayBlack Bean Soup with Chips
  • Saturday – Homemade Pizza (Pesto/Fresh Mozzarella/Roma Tomatoes for the adults, so yummy!) – I like this crust recipe
  • Sunday – Eat Out (let’s see if we can make it to Sunday without eating out!!)
