This week my menu plan is all about using what I have in my cupboards and freezer. My husband and I are planning on finishing our unfinished basement over the next couple of months, and I am hoping to cut back on our grocery budget to help finance the project. I am pretty stocked up right now, plus our beef is coming soon, so it shouldn’t be a problem. (Speaking of beef, I am a huge fan of buying beef in bulk. Learn more here.)
I am also trying really hard to get back into the habit of eating leftovers, which means that I am attempting to make meals that will reheat well (and that we will want to eat again). One tool I am going to attempt to make more use of is my friend Tricia’s site Once a Month Mom. If you want to be inspired be sure to check her site out! She teaches you how to cook freezer and family friendly meals in bulk for an entire month. Oh and did I mention her meals are budget friendly too? Check out her September Menu here.
Here is the plan:
Monday – Spaghetti & Meatballs, Salad
Tuesday – Chicken Stir Fry with Brown Rice
Wednesday – Leftovers
Thursday – Eat Out/Pizza
Friday – Beef Tips and Egg Noodles, Mixed Vegetables
Saturday – L – Leftovers
D –Zesty Slow Cooker Chicken BBQ Sandwiches (recommended by Once a Month Mom), Chips, Raw Veggies
Sunday – L – Leftovers
D – Chicken Parmigiana

Have a wonderful week!

Those bbq slow cooker sandwiches are looking good for me this week:) I hope you will soon join me for Crock Pot Wednesday. Not only is it free, it’s just a fun thing to do. I will look forward to your post on diningwithdebbie.blogspot.com with Mister Linky.
