Another Monday means another menu plan in my house. At least lately. :-) Posting my menu plans helps keep me accountable, which in turn saves me both on time and stress!
For some reason I am in the mood to cook right now…I’m guessing it is the cooler temps outside. I am still up to my ears in tomatoes, so I have plans to make more salsa, marinara sauce and maybe some bruschetta this week. And even though I am jumping the gun just a little bit, I decided to make my homemade apple crisp – it is in the oven right now – because I couldn’t resist the bags of apples that I found at Kroger today. (I usually wait until well into the fall to make it).
I also wanted to mention that I was able to get this week’s groceries plus a stockpile of Bounty Paper Towels and Annie’s Organic Mac & Cheese for just under $90. I was pretty happy considering I bought meat, lots of produce and several organic items. You can view my list of Kroger deals for this week here. And I share that only to illustrate that it is very possible to eat well on less, using coupons and stockpiling while things are on sale. :-)
Here is the plan:
Monday – Gingery Turkey & Cucumber Pitas (I’m substituting ground turkey for ground pork) & Homemade Apple Crisp (YUM!)
Tuesday – Angel Hair Pasta w/Basil, Cherry Tomatoes and Chicken & Salad
Wednesday – Leftovers
Thursday – Grilled Turkey Burgers over Salad
Friday – Eat Out/Pizza
Saturday – L -Leftovers
D – Spaghetti & Meatballs, Salad
Sunday – L – Lunchmeat Sandwiches, Chips/Pretzels, Fruit
D – Leftovers

I have found that as the weather gets cooler I cook more.
Can you post your recipe for apple crisp please? I recently came into A LOT of green apples and I could use a good crisp recipe!
