Well, I am back on the menu planning wagon after taking a week off. I really do feel better starting the week with a plan, even if it isn’t a very exciting one! :-) We’ll be focusing on eating from our fridge/pantry this month…ALL month long if I can stand it. I really want to pinch our pennies even more over the next few weeks because I am determined to get our last remaining student loan paid off by April! Plus we really do need to eat what I have stocked up on during the last few weeks…my chest freezer is the fullest it has ever been. Thankfully the produce we are growing is helping me fill in our meals very inexpensively (lettuce, tomatoes, peppers). So here it is…my plan for the week:
Monday – Tacos/Taco Salad & Refried Beans
Tuesday – Garlic Chicken/Broccoli/Carrots with Angel Hair Pasta
Wednesday – Steak & Green Peppers on the grill, Baked Potatoes
Thursday – Eat Out (Pizza)
Friday – Turkey/Ham/Bacon Club Sandwiches, Pasta Salad
Saturday – Spaghetti with Homemade Meat Sauce (in the freezer), Salad & Garlic Bread
Sunday – Honey Mustard Pork Roast (Crockpot), Mashed Potatoes & Frozen Veggies
