Fruit Pizza

Last Friday, I offered to take dessert to a get together with some of my girlfriends. I somehow managed to forget about my offer when I went to the grocery on Wednesday and when I realized what I had done on Thursday, I decided to figure out what to make with what I had on hand.

I rummaged through my cabinets and fridge and came up with enough ingredients to make a fruit pizza. And as I was making it, I got to thinking about how affordable it was to make. I used a Betty Crocker Sugar Cookie Mix that I had gotten for free awhile back as my crust. I baked it for about 12 minutes and let it cool.

I then took a softened package of cream cheese (that I needed to use soon anyway) and added 1 tsp of vanilla and some powdered sugar (to taste…approx. 1 1/2 cups I would guess?) and beat it together with my hand mixer. I would guess the cost of these ingredients to be about $1.

As for the fruit, I used grapes, strawberries, Mandarin oranges and 1 banana to top the pizza. Approximate cost for these ingredients? Again, maybe $1 for all the more fruit I used.

So for approx. $2, I made a dessert on the fly. And while I am no Martha, I thought it turned out pretty good for being a last minute idea.

Here is a picture of the almost final product. When I arrived at my friends house I sliced a banana (on the diagonal) and put it around the outside edge.
