Menu Plan Monday – July 28

I missed menu planning last week due to being out of town, which resulted in lots of hot dogs, frozen fries and chicken nuggets. Not to say I am above eating those foods, but I’m looking forward to eating a little healthier this week!
I’m trying to use my pantry and freezer stash the next couple of weeks in order to free up some money. I’m going to try to stick to spending less than $50/wk. the next couple of weeks…which should work (in theory) since my pantry and freezers are full. We have family coming to visit Friday-Monday this weekend, so sticking to a plan could be a little challenging. We’ll see how it goes! Thankfully we have lots of veggies starting to come in which will help out with our produce needs for the week.

* Breakfast options for the week are cereal, granola bars, frozen waffles, eggs, toast and fruit.

* Lunch options for the week are leftovers, grilled cheese, frozen veggies, macaroni & cheese, peanut butter and jelly, frozen chicken tenders, frozen fries, and fruit.

Here is our dinner plan for the week. I sometimes switch the order around, but typically try to stick to the planned meals. (note that I said try! :-))

MondayStuffed Zucchini & Rice

Tuesday – Grilled Chicken with Cherry Tomatoes, Basil & Pasta

Wednesday – Spaghetti with meat sauce (from freezer) and Garlic Bread

Thursday – Homemade Pizza

Friday – Grilled Chicken, Potatoes & Green Beans

Saturday – BBQ Beef Ribs & Chicken, Corn on the Cob, & Salad

Sunday – Eat Out
