Menu Plan Monday + Taco Pizza Recipe & Chicken Crescents Recipe

As of this week, I am going to start trying to have a crock pot night at least once a week. Since I also want to try to make one new recipe a week, this should kill two birds with one stone.

Also, something that I have been doing for awhile now that helps me to save money is to plan 2 meals (usually Monday and Wednesday) that use the same meat. I then use one pack of meat, cook it up and spilt it in half. I put half in the fridge for later, and use the other half on the current night’s meal.

Last week I diced and cooked up 1.75 lbs of chicken with olive oil, salt and pepper, and split it in half for 2 meals. This week I am going to brown 1.5 lbs of ground beef, split it in half and use it for Monday and Wednesday’s meals. Even though most recipes call for 1 lb of meat or more, I have found that you really can’t tell much of a difference if you use a little less meat.

Here is our menu for the week:

Monday – Cheesy Noodle & Beef Bake

Tuesday – Teriyaki Chicken, Baked Potatoes & Veggies

Wednesday – Taco “Pizza” Wheel (recipe below)

Thurday – Crock pot Day: Crazy Chicken, Rice & Veggies

Friday – Leftovers/Clean out the freezer

Saturday – Eat Out

Sunday – Chicken Crescents (recipe below) & Baked Corn

Taco “Pizza” Wheel
This is one of our family favorites that I made after watching someone on the Food Network make something similar. Here is how I make it, feel free to substitute and experiment on your own.

You will need:

Pizza Crust Dough (I usually use the stuff in a tube from the grocery, but am trying this recipe for the first time this week)

Taco filling (I use ground beef, salsa and a taco seasoning packet)

2 cups Shredded Cheese (I like the Mexican Cheese blends)

How to make it:

Press your pizza dough into a round pizza pan. Take you taco filling and place it on the pizza dough so that it resembles a wreath (leaving a circle of dough in middle).

Take a pizza cutter (or knife) and cut the dough as you would a pizza, stopping when you get to the meat mixture. Then take each pointy end of the “slice” and pull it up over the meat mixture, tucking it under the outside edge of the crust. Repeat all around the pizza until done.

Bake according to instructions for whatever pizza dough you are making. Serve with salsa, sour cream, or guacamole.


Chicken Crescents (from my friend A.)
8 oz Softened Cream Cheese
4T Milk
1T Chopped Onion (or onion salt, powder)
2 pkg. Crescent Rolls
3 Chicken Breasts Cooked and Diced
Salt & Pepper to Taste

Mix cream cheese, milk, onion, salt & pepper. Stir in Chicken.

Leave 2 unbaked crescent rolls together and put a large spoonful of chicken mixture in the middle. Fold up corners (grab opposite corners and form into a pouch)

Place on lightly greased cookie sheet and bake for 20 minutes at 350 degrees.

Freeze well.
