Bacon Cheeseburger Salad with Thousand Island Dressing

Kick off a summer of grilling with this indulgent Bacon Cheeseburger Salad with Thousand Island Dressing!

My kids finished school before Memorial Day, so summer break is officially here. Bring on the warmer temps, lots of pool time and chilling out! While I don’t work as much during the summer months, we do stay busy, so quick & simple meals are a must. Our grill is my best friend right now – all that you need is quality meat, marinades and/or seasonings and some veggies and you can create a healthy and delicious meal, fast!

My go to store for all of my grilling needs is Giant Eagle…and it has been for years. Out of all of my local grocery stores, I have found Giant Eagle to have one of the best selections of quality meat. I love their produce too!

Giant Eagle Grilling Meat

When I have time, I’ll assemble my own kebobs, burgers and marinades, but I love being able to grab already assembled and seasoned options at my local Giant Eagle meat counter too.

One of my personal favorites are the already made Bacon Cheddar Burgers. They are so easy to throw on the grill…no extra seasoning or cheese required!

Giant Eagle Salad

This past week, I decided that a Bacon Cheeseburger Salad sounded good. I love combining Nature’s Basket Salad Blend with crunchy Romaine Hearts to form  my salad base. I wash and chop both types of lettuce and keep them in a large bowl in my fridge – then I can use that basic mix for several different salads during the week (mix up meat and toppings!).

I once had a cheeseburger salad at a restaurant that had lots of diced pickles mixed in, so I decided to add pickles to my version of this salad. You could totally substitute cucumbers if you don’t have any pickles on hand.

Croutons, cherry tomatoes, and homemade Thousand Island Dressing rounded out my ingredients.

Light summer meals need to end in dessert, right?! I picked up a bag of Pepperidge Farm Farmhouse Dark Chocolate Chip Cookies and some Lemon Lemon Sparkling Lemonade to round out our meal, and then I headed home to start cooking!

After I got home and unloaded the groceries, I turned on the grill. While it was warming up, started chopping. Another perk of the Bacon Cheddar Burgers is not having to cook bacon. You don’t have to add extra cheese either…although I did, because, why not?!

While the burgers were grilling, I mixed up some Thousand Island Dressing. The recipe below makes a LOT of dressing, which you can use to top burgers or more salad for another meal.

These burgers cook up super fast. I let them settle for a few minutes after I took them off of the grill, then I chopped them up and added them to my salad.

I should also mention that Market District Texas Toast Garlic & Butter Croutons added the prefect crunch and flavor to this meal…I’ll definitely be using those again. So there you have it…my Bacon Cheeseburger Salad Recipe…it was SO good!

Cheeseburger Salad Recipes

No summer meal is complete without a light dessert to round it out. My kids love to play outside after we eat, so I rounded up the cookies & lemonade and headed to my front porch.

The cookies are light and crisp and the lemonade is perfectly sweet and fizzy.

It was a great end to a gorgeous summer day!

Bacon Cheeseburger Salad Recipe

Serves: 1 Salad

Ingredients
  • Giant Eagle Gourmet Bacon Cheddar Burger
  • Romaine Hearts
  • Mixed Salad Greens
  • Cherry Tomatoes
  • 1-2 Dill Pickle Spears
  • Shredded Colby Jack Cheese (or cheese of your choice)
  • Market District Texas Toast Garlic & Butter Croutons
  • Homemade Thousand Island Dressing:
  • 1 Cup Mayonnaise
  • ½ Cup Ketchup
  • 1 Cup Sweet Pickle Relish
  • 1 Pinch of Salt
  • 1 Pinch of Pepper
Instructions
  1. Pre heat Grill on medium high heat.
  2. While Grill is heating, wash and chop romaine hearts (1/2 of one works well for 1 salad), and cherry tomatoes. Dice dill pickle spears.
  3. Place burger on hot grill and cook until no longer pink (approx 7-8 minutes per side).
  4. While burger is grilling, wisk together Thousand Island Dressing ingredients.
  5. Remove burger from grill and allow it to settle for 5 minutes, then chop into bite sized pieces.
  6. Start with a bed of lettuce. Top lettuce with pickles, tomatoes, cheese, croutons, and burger pieces. Drizzle with Thousand Island Dressing.
  7. Enjoy!
