Easy Freezer Breakfast Sandwich Recipe

My husband and son leave the house at 6:30 most mornings for school. They love when I have easy to grab breakfast sandwiches in the freezer for them to eat on the go. These breakfast sandwiches can be made many different ways, but with eggs, cheese and bacon is their favorite. Sometimes I will stretch the eggs by adding sautéed onions and peppers. You could also do ham, Canadian bacon or sausage as the meat, but you don’t have to do meat at all. (Tip: How to Save Money on Meat)  I have made these with just eggs and cheese before and they were eaten up just as fast.

They are easy to make and much cheaper than store bought or from a drive-thru. I wrap mine in tinfoil and store in gallon size freezer bags. When we are ready to eat them, we just unwrap them and pop them in the microwave for 1-2 minutes and they are ready to go!

By my calculations, these work out to under $1 per breakfast sandwich.  You really can’t beat the price.  All in all it took me less than 1 hour to make 12 breakfast sandwiches.

Having this easy freezer breakfast sandwich recipe in my arsenal saves me both time and money, and it makes my family happy. What’s not to love about that?

Breakfast Sandwiches
Ingredients
  • 1 dozen eggs
  • 1 Tbsp butter
  • Salt & pepper to taste
  • 12 slices of cheese
  • 12 slices of bacon
  • 12 english muffins
Instructions
  1. Melt butter and scramble the eggs in a large sauté pan, adding salt and pepper to taste.
  2. Cook bacon in strips.
  3. Slice cheese thinly or use pre-sliced cheese.
  4. Separate the english muffins.
  5. Once all items are prepared and organized like an assembly line you can put the sandwiches together.
  6. Put a large spoonful of scrambled eggs on the bottom half of the english muffins.
  7. Break each piece of bacon in half and put 2 pieces on top of the eggs.
  8. Top with a slice of cheese and the top of the english muffin.
  9. Wrap each sandwich in tinfoil and store in gallon size freezer bags.
  10. When ready to eat, unwrap the sandwich and heat in the microwave for 1-2 minutes.
