Menu Plan Monday | Week of 4/15/13

It’s MONDAY! It also happens to be TAX DAY, both of which call for a little treat, right?! I’m feeling a little beat up on the tax front this year, so I’m going to have to bust out the bottle of wine or a yummy dessert to ease the pain a little. ;-)

This week isn’t too out of the ordinary crazy for us. We have our typical soccer/gymnastics/homework routine, plus we are having friends over for dinner Saturday night. The forecast looks pretty nice this week too, so all in all I can’t complain! We typically eat our leftovers for lunch, which is why I no longer includes a “leftovers for dinner” meal in my menu plan.

Here is what I’m planning for our dinners this week, trying my best to eat what we have on hand to give our grocery budget a little break (see tax pain above):

  • MondayCowboy Chicken (Crockpot) with Spanish Rice
  • Tuesday – Cheese Tortellini, Homemade Meat Sauce, Broccoli (half of the sauce will go in the freezer for a future meal)
  • WednesdayParmesan Garlic Chicken and Roasted Potato Wedges, Veggie
  • Thursday – Burgers & Hot Dogs on the grill, Tater Tots, Raw Veggies & Dip
  • Friday – BBQ Grilled Chicken Salad (if I’m up for it I might mix up some Lime Margaritas to go with!)
  • Saturday – Pizza (take out), Salad, Dirt Dessert (will post pictures and recipe soon) w/friends
  • Sunday –  Beef Roast (crock pot), Egg Noodles, Roasted Carrots
