I always try to use left over ham in egg casseroles. I use the crescent rolls as the bread in it. It's so nice to make the casserole the night before as a breakfast. Or I've made mine in the AM and then popped it in the oven for dinner. But my kids fav is the potato and ham casserole (with the shredded frozen potato's) a huge hit.

I love your ideas. I find ham so versatile. We like to make Betty Crocker boxed scalloped potatoes and then add ham to it. I usually get the potatoes between $0.10 - $0.40 a box with coupons. Then at WalMart I will pick up a Special Select Farmland Ham, with my $1 off coupon, it makes it $1.88. So I have dinner for around $3 with all the ingredients, and some biscuits/rolls (pillsbury products are a MM at my grocer a lot). It's really good on a cold day when you want something filling.
