Last week I was lucky enough to receive an advanced copy of my friend Erin Chase’s new cookbook, The $5 Dinner Mom Cookbook! It is so exciting to see the fruits of her labor in book form – and I must say it is a great book! Not only does Erin offer up recipes that come in at $5 or less for a family of four, she also provides tips about couponing, strategic grocery shopping and meal planning.

My fave frugal meal is egg noodles, cream of mushroom soup, tuna, green peas, garlic powder, and anchovies (you don’t even taste them). Yummy!!

My family’s favorite “cheap” meal is chicken tenders with cream of chicken soup served over rice. We add in all kinds of things too. The kids like cheese on top, I mix in mixed veggies sometimes, but my fav add in is cooked chopped spinach.

My favorite frugal meal is a whole turkey or chicken, then using the carcass to make soup, leftover meat to make casseroles….it’s a whole week’s worth of meals!

My favorite meal is simply called “Casserole”. I brown a pound or so of beef, then add cream of chicken soup, rice and canned corn (with the liquid). Cook until the rice is done. It’s hearty and even my 3 year old loves it!

I love taking Hamburger/Chicken Helper and creating it into something else. Like enchilada helper and putting it in taco shells with added toppings.

I would have to say cheeseburger soup. It’s basically veggie soup with gr. beef and a can of cheddar cheese soup. Yum.

My favorite frugal recipe is chili – we use 1 lb. of ground beef and tons of beans and tomatoes, and always make enough to eat for a couple days and some to freeze for later. So delicious!

My favorite frugal recipe is Sloppy Joes. I buy sauce when on sale, I always have bread/rolls stocked in the freezer and use any meat that is currently on sale that week- beef, turkey, chicken, etc.. whatever works!

Any leftover veggies, noodles or rice I pop into the freezer in a big bowl I keep in there. When it gets full or I happen to decide to make soup from a chicken/turkey carcass I take out the bowl and add everything that has been saved and frozen. My kids call it garbage soup because you never know what you will find it in! It doesn’t get more frugal than that!!

SOUP! is my favorite “cheap” food, you can make it with whatever you have and it feeds a crowd. add some rolls or bread and you have a filling meal.

My favorite meal is anything I can make without going to the store. Otherwise, I like goulash. Elbow macaroni, beef, onions and tomatoes. Simple, comfort food.

My favorite frugal dinner is a pound of ground meat, one can of veggies and a pack of Ramen noodles. You cook it all together and add a tad bit more water and voila, you have a one pot meal! And with children’s tastes changing every five seconds, you can change the veggie and/or the ramen flavor at will.
