Menu Plan Monday – October 6

This is my first Menu Plan Monday post in at least a month, and I am so glad to be back! I decided to write this post before getting started on my “deals” posts this week so that I don’t procrastinate…because my week goes so much more smoothly when I have a menu plan. Less stress, healthier eating, and less money wasted eating out….what’s not to love about menu planning? :-)

This is also the first menu plan that I have shared since my husband and I signed up for a Biggest Loser challenge through his work. I’m hoping to try at least one new healthy recipe per week, and am also attempting to make our typical nightly meals healthier. We already do fairly well in the whole grain category, but need to work on adding more veggies and cutting back on the amount of fat we are eating.

So here goes…week #1 of our healthier meal plans…. And to make this even more fun, I’m going to attempt to do this and actually stay within our $90/week budget (which includes household/toiletry items). It should be interesting…

MondayBBQ Chicken Salads (In an attempt to make these even healthier, I’ll mix some baby spinach in with our salad greens, and will also add cherry tomatoes, black beans and corn)

TuesdayLeftover Chili (I made this with black, pinto & kidney beans, lean ground beef and diced tomatoes)

Wednesday Chicken Breasts, Roasted Potatoes (red), Frozen Veggies

Thursday Pizza Night (This night is built into our weekly budget and DH and I are not giving it up to lose a few pounds…we like pizza too much. I am trying to add veggies and to stick to thinner crust pizza…and am also trying to eat a salad first so I eat less pizza. I’ll be hard pressed to give up my weekly Coke though….)

FridayTiny Turkey Meatball and Chickpea Soup with Broccoli Rabe and Pecorino (Yeah…I don’t like Broccoli but found Ground Turkey on sale for $1.49/lb last week…plus this recipe “won” during a Biggest Loser Challenge a couple of weeks back…so we’ll see how this goes)

Saturday Dinner/Potluck with Friends

Sunday Teriyaki Steak Stir Fry with Brown Rice & Frozen Veggies

Weekly Budget Notes: The only items that I will have to buy for this menu is the broccoli rabe and chickpeas for the soup on Friday. I have every thing else on hand in the pantry or freezer.

To keep our meat expenses down, we purchase beef in bulk from a local farmer once a year, which means we spend less than $2.50/lb for all of our cuts of beef. In terms of chicken, pork and turkey, I will only buy it when it is $1.99/lb or less. When I see it on sale I buy as much as I can and freeze it for a later date.

We grew our own cherry tomatoes, I purchased the red potatoes for less than $1.25 at a local farm, and I only buy frozen veggies when they are on sale for $1/ea or less.

I try to buy what I can as cheaply as possible so that I am able to “splurge” on some organic produce and dairy. Oh and I always use coupons if possible.

It is also important to note that I am only feeding two adults and one toddler at the current moment.
