Where did Menu Plan Monday Go?

I have been asking myself that question for over a month now! My husband has been working crazy hours for the last six weeks or so, and the end result has been a really out of whack dinner schedule. I went from faithfully planning and posting my menu plans each week to nothing.

I have still been cooking some of the time, but we have been eating out a lot too. And when I say “cooking” I have to admit that I really haven’t been trying anything new or doing anything very complicated. In a word…I am back in my RUT.

Last week my husband and I joined a “Biggest Loser” challenge through his work. While we both do ok in the exercise department, we have several improvements to make when it comes to our eating habits. I have been spending some time over the last few days researching some new (and healthier) snack and dinner options, and I am excited to get my butt back in the kitchen.

My question to you is, in addition to my (hopeful) return to Menu Plan Monday, I am thinking about adding a featured healthy recipe with a potential review. We are also being assigned weekly “challenges” as part of this Biggest Loser contest, and I was thinking about sharing that info with you as well. I thought it might be interesting to show how I am figuring out a way to eat healthier foods on a budget. I can also talk about any work out tips I am learning, what (if anything) is helping us lose weight etc… All while being wise with our money of course (i.e. no liposuction here…not that I am opposed to it!)

What are your thoughts? Would you be interested in reading more about this topic? Or should I stick to the deals? Please leave a comment or send me a note and let me know what you think! :)
