Today is one of those days where if I didn’t have a blog, I probably wouldn’t feel obligated to plan my dinners for the week. And when I don’t plan my dinners, we end up eating out too much and/or eating less than healthy foods, both of which end up driving me crazy! Not to mention we blow the budget. So even though I’m not in the mood to plan meals tonight, I’m doing it. And I’ll be happy that I did as the week goes on. It really does end up saving a lot of time and money in the long run.
This week is all about using what I have on hand in the pantry/freezer. I went over budget last month (more on that later), and I am going to try to at least hit my budget for this month (if not spend less). I’ll try to be creative, but I might not be attempting many new recipes this month. We’ll see how it goes. :-) On a positive note, we picked up our quarter of a beef last week, so the freezer is full of fresh beef (ground beef, steaks, ribs, etc…). That should make for some good grilling over the next couple of months or so.
Monday – Taco Salads & Refried Beans
Tuesday – Parmesan Pork Chops, Rice & Frozen Veggies
Wednesday – Burgers on the Grill, Frozen Fries & Frozen Veggies
Thursday – Garlic Chicken w/Linguine, Carrots & Broccoli
Friday – Homemade Pizza (on the grill?) & Salad
Saturday – Eat Out
Sunday – Steak, Baked Potatoes & Grilled Peppers (I tried this last week and we loved it! – I sliced up 1 green and 1 red bell pepper, placed it in a foil packet with seasoned salt and small cubes of butter and threw it on the grill for approx. 15 minutes (top rack) YUM!)
