Menu Plan Monday – June 16

Here is our menu plan for the week of 6/16-6/22. Last week we ate out twice, and stuck to our plan otherwise. I’m using Father’s Day as my excuse for our eating out more than once…

I am really going to try and change things up this week with 1 new recipe, pizza on the grill, and eating ravioli (which we haven’t had in a LONG time). I have found that it is much easier to motivate myself to cook (and to not eat out!) when I try something new from time to time. I am also trying to find ways to use the oven less now that it is so warm outside…which means more sandwiches/wraps and using the grill for more than just meat.

I don’t know about you, but I’m not really up for eating really heavy meals during the summertime. I’m hoping to experiment more with fresh veggies this summer, and to try out some new salad & sandwich recipes. Anything to keep myself out of the food rut I have been in for the last several months.

So here it is…we’ll see how things go this week. If I stick to the plan, I won’t use the oven for dinner at all, which would be a first for me!

Monday – Four Cheese Ravioli (Buitoni) with Homemade Meat Sauce & Salad

Tuesday – Grilled Chicken Salad

WednesdayHomemade Pizza & Salad (I’m going to try to convince my husband to try making this on the grill…we’ll see how that goes!)

ThursdayBBQ Chicken Wraps & Baked Chips or Pretzels

FridayPork Tenderloin Fajitas & Mexican Style Rice (i.e. white rice with salsa mixed in!)

Saturday – Eating out (dinner with friends)

Sunday – Beef Burritos & Refried Beans (I make my taco filling – 1 lb. ground beef, 1 packet taco seasoning, 1/2 jar of mild corn & black bean salsa, then I fill and roll the soft tortillas and brown them in a little bit of olive oil)
