This is my first week back in the saddle after taking 2 weeks off from menu planning. I must say that not having a plan for the past two weeks has been a bit disastrous for our waistlines and our wallets…We ate out more than I care to admit, so I’m hoping that we can get back on track this week.
Here is what I am planning on for our dinners:
* Grilled Bacon Burgers (recipe below) & Frozen Fries
* Baked Penne & Garlic Bread (I have some meat sauce in the freezer ready to go)
* Steak on the Grill, Corn on the Cob & Salad (we have steak in the freezer)
* Grilled Chicken, Rice, Frozen Veggies
* Leftover or Pizza Night

Recipes:
Grilled Bacon Burgers from Taste of Home Simple & Delicious
1 egg
1/2 cup shredded cheddar cheese
2 tablespoons chopped onion
2 tablespoons soy sauce
2 tablespoons ketchup
1/4 teaspoon pepper
1 pound ground beef
5 bacon strips
5 hamburger buns, split Leaf lettuce, tomato slices and onion slices, optional
In a small bowl, combine the egg, cheese, onion, soy sauce, ketchup and pepper. Crumble beef over mixture and mix well. Shape into five patties. Wrap a bacon strip around each; secure with a toothpick. Grill patties, uncovered, over medium-hot heat for 5-6 minutes on each side or until meat is no longer pink. Discard toothpicks. Serve on buns with lettuce, tomato and onion if desired.
