Menu Plan Monday – April 7

I skipped MPM last week and was on the verge of doing it again this week. But I need to try to stick to a plan, so here goes…

Monday – Chicken & Cheese Tortellini Toss (recipe below – note that I made this up so it isn’t the most “technical” recipe)

Tuesday – Burgers on the Grill, Frozen Fries & Veggies

Wednesday – Chicken Burritos & Refried Beans

Thursday – Eat Out/Pizza Night

FridayCorn & Black Bean Meatloaf, Fingerling Potatoes, Veggies

Saturday – Leftovers

Sunday – Sandwiches, Chips, Fruit (we are eating snacks at a late birthday party and won’t need much)

RECIPES

Chicken & Cheese Tortellini Toss

Ingredients:

1 package of Cheese Tortellini (there is whole wheat on sale this week at Kroger)

3-4 Chicken Breasts

3 tsp Extra Virgin Olive Oil

1 can diced tomatoes or fresh cherry tomatoes (as many as you like)

1/2 tsp Red Pepper Flakes

1 tsp minced garlic

1/2 – 1 tsp of salt (add to taste)

1/2 c chicken broth/stock (I dissolve a bouillon cube in water in the microwave)

1 tsp dried basil or a handful of fresh basil chopped

2-3 large handfuls of fresh spinach (optional)

Grated Parmesan Cheese (optional)

How to make it:

Put pasta water on to boil.

Cook chicken in 1 tsp of olive oil. Set aside. (I put a couple of paper towels on a plate to soak up some of the oil).

Begin cooking Tortellini.

Saute 1 tsp of minced garlic & 1/2 tsp red pepper flakes in 2 tsp of Extra Virgin Olive Oil for 30 seconds. Add tomatoes, chicken broth & salt. Bring to a boil. Lower heat and add chicken. When Tortellini is almost done, add spinach & basil. Cook until both are wilted and then lower heat. Drain Tortellini. Add Tortellini to sauce/chicken mixture. Grate cheese on top. Serves 4.
