Menu Plan Monday – April 28

Another Monday means another menu plan. I am a little late posting this week, but decided that I need to stick with it. We stray when we have a plan, and not having plan at all is even worse on our pocket book!

Last week we mostly ate at home, but didn’t follow our plan all that well. I didn’t follow the recipe for the Crumb Coated Ranch Chicken (no Ranch & I cooked it in olive oil instead of baking it) and it was a flop. I will be trying the recipe again in the next couple of weeks now that I have Ranch dressing in the fridge. We didn’t have Steak, Spaghetti or Baked Mac & Cheese either, so you will be seeing some repeats this week.

I did try to recreate a BBQ Chicken Wrap from a local restaurant with great results. I’ll post pics and info about that later in the week. I highly recommend the Grilled Bacon Burgers (recipe in my post here). They were easy to make and I typically have everything on hand except the bacon. Another new thing that I tried this week was to add mini chocolate chips to the Bisquick Shortcake recipe. YUM! I would recommend adding 1/4 cup (I added 1/2 cup and it was a little much).

Here is our plan for this week. We will be eating lots of potatoes since I found them on sale at Kroger last week (5 lbs. for $0.99).

Monday – Chick Fil A (we know how to live it up on our wedding anniversary! LOL)
Tuesday – Sirloin Steak, Baked Potatoes & Veggies
Wednesday – Chicken Crescents (from the freezer) & Veggies

Thursday – Eating out with my girlfriends (Grilled Cheese and Frozen Fries for DH and DD)
Friday – Meatless Spaghetti & Salad
Saturday – Grilled Chicken, Baked Potatoes & Veggies
Sunday – Beef Roast in the Crockpot with Potatoes and Carrots
