Make It Yourself Monday

Angie at Thrifty Florida Mama has decided to start hosting Make it Yourself Monday in the spirit of sharing meals that we make at home that will help us to cut back on eating out and buying convenience items at the grocery.

It just so happens that I tried to recreate a BBQ Chicken Wrap that I had at a local restaurant last week, and I was going to post about it anyway. So even though it is Tuesday, here is my idea for a yummy, at home meal. (And for the record, Maggie is the queen of wraps in my opinion! Her blog is what gave me the idea to give this a try).

I really just winged it when it came to making these, so I don’t have exact measurements on all of my ingredients. These are really easy to make though…just add what looks right to you.

Ingredients

1 tsp Olive Oil

1 lb Chicken Boneless, Skinless Chicken Breasts

1 can Black Beans

Your Favorite BBQ Sauce

Shredded Cheddar Cheese (however much you like, probably about 1/2 c.)

Mixed Greens or Lettuce (your preference)

Ranch Dressing (about 1/4 c.)

Red Onion (sliced thin, optional)

4 Large Tortillas

Directions

Drain and rinse black beans, begin heating in a small sauce pan on medium heat.

Saute chicken in olive oil until fully cooked (about 10 minutes).

Once the chicken is cooked, add BBQ sauce to coat the chicken (don’t add so much that it is soupy). Heat through.

Add black beans, shredded cheddar, and a small amount of Ranch Dressing to the BBQ Chicken. Mix.

Place a tortilla flat on your working surface. Spread a thin layer of Ranch Dressing on the tortilla. Place a handful of greens on the tortilla. Add a couple of heaping spoonfuls of BBQ Chicken mixture to the greens. Roll the tortilla like a burrito. Slice on an angle. (Check out Maggie’s post about assembling the wraps if you would like more detail. I am still new at this!)

Here was my finished result. Sorry I am not a food photographer, but I think you get the idea. This is the first time I tried using “glue” (in this case Ranch Dressing) to help hold the wraps together…and FINALLY I got the result I was looking for. I thought these turned out to be a pretty good substitute for the ones I ate at the restaurant, and my husband said this recipe was a keeper!
